For this process, the coffee cherries spend 70 hours in an anoxic environment. The coffees are then dried carefully on raised beds for 21 days where they continue to ferment and develop complex flavors.

This coffee fills the room with fruitiness as its ground. There are very obvious notes of berry and ripe muskmelon as we taste the coffee, with slight hints of jackfruit that provides the funkiness. The srupy body along with berry-like taste, instantly reminds you of a sweet-sour berry compote. With bright acidity and funkiness, this coffee is an exciting notes of natural coffees but sharpness of a washed coffee.
